Alternative bioprocesses are being developed for strategies that properly valorize different sources of agro-food residue and by-products. Food residue and waste constitute one of the major challenges on the path to a sustainable food system, and the valorization of by-products also has the potential to provide a source of bioactive molecules (or high value-added products) that can be used in different industries. This requires innovation and a thorough investigation into how we can promote the development and use of competitive green technologies in the market, taking advantage of the biomass generated from agro-food residue, and establish processes that are both environmentally sustainable and economically sound.

In recent years, the study of bioprocesses and green technologies for the use and valorization of agro-food by-products has been increasing. However, the implementation of these processes in the industry is still limited. The goal of this Research Topic is to present several examples of new developments and applications of novel strategies that constantly search for innovation, and technology that can improve the sustainability of our current food system, introducing the circular economy, sustainable processes, sustainable food systems, food upcycling, and applications of emerging technologies as tools for the re-use and re-adequation of agro-food residues sources back into the food supply chain. This collection will also encourage the submission of research into the recovery of bioactive molecules that can be applied in main industrial centers such as food, cosmetics, pharmaceuticals, among others, which allow for the identification of the future challenges and potentials of these type of bioprocesses.
