The potential of aromatic compounds present in natural resources has long been recognized in traditional medicine. Furthermore, these compounds are applied in different industries including food, cosmetic, pharmaceutical, and biotechnological industries. In addition, there is a constant and growing demand for aromas.

Conventional technologies for obtaining aromatic compounds from natural resources have their shortcomings such as insufficient and irrational exploitation of natural resources and ecological and economic drawbacks. To address these issues of conventional processes, new green technologies and solvents have been developed. Moreover, they use environmentally safe solvents, provide process intensification, energy and time saving, products with improved properties, and rational exploitation of resources.

Considering the accelerated development in the field of green technologies and solvents, this Research Topic will provide valuable insights into the current use and future perspective of the application of sustainable and clean extractions and solvents for the attainment of aromas from natural resources. The added value of this topic is the connection between science and industry and joint efforts to scale up and implement these processes.
