Food is a rich bioactive compound source that interacts with immunocompetent cells and modulates various signaling pathways, ultimately affecting inflammation and overall health. Food compounds affect hormonal and nervous system. Food proteins are potential sources of antigens that trigger inflammation, such as allergy or celiac disease. Other food compounds, such as vitamins, minerals, polyphenols, and fatty acids, could enhance immune function and reduce the risk of chronic diseases. Food compounds can promote an organism's homeostasis by affecting immune-competent cell's actions. In addition, a gut microbiome that actively responds to dietary components increases the body's ability to respond to pathogens and maintain homeostasis. Mucosal surfaces form the body's interface with the external environment and play a key role in immune surveillance and protection against infection. In summary, maintaining the body's homeostasis is the interaction of the mucosal immune system and microbiome and going further out the endocrine and nervous systems.

Our goal is to find mechanisms of biologically active food compounds that interfere with mucosal system response. How they activate the cells of the innate and adaptive immune response, and which signaling molecules are pivotal in that response. The second goal is to determine the interaction between food compounds, mucosal system immune response, microbiome activity, and endocrine and nervous system interaction to maintain the body's homeostasis. Understanding these interactions will help us develop targeted dietary strategies that enhance immune function and promote overall health knowledge, which could lead to innovative approaches in nutrition therapy, potentially reducing the risk of chronic diseases linked to immune dysfunction and dysbiosis.
