These non-traditional milks often contain unique protein profiles or higher fat and protein contents than cow's milk, offering alternatives for dietary needs such as allergies or diabetes. Despite their nutritional value, the scientific exploration and technical innovations in the processing and characterization of milk from these species have not advanced as rapidly as those from bovine sources, primarily due to their limited production range in rural areas. However, growing interest in their unique properties has sparked research efforts aiming at improved processing techniques and novel product development.

This Research Topic aims to showcase recent advancements and research in the production, processing, and characterization of non-bovine milk. It seeks to uncover and enhance the safety, quality, nutritional profile, and shelf life of non-traditional dairy products, paving the way for innovative solutions that address current limitations.
