Background

Polysaccharides, as a type of biopolymer composed of more than ten monosaccharides connected by glycosidic bonds, exhibit excellent physicochemical properties and diverse applications. They are known for their beneficial biological activities, including antitumor, anticancer, antibacterial, anti-inflammatory, immune regulation, hypoglycemic, hypolipidemic, antioxidation, and anti-aging effects. However, the inherent biological activity of polysaccharides is often relatively low, limiting their application potential. Hence, enhancing the biological activity and broadening the application scope of polysaccharides through structural modification or by introducing new functional groups is imperative. This can be achieved through various methods:
• Physical Methods: Techniques such as ultrasonic treatment, microwave processing, radiation, and conjugation treatment.
• Chemical Methods: Approaches including sulfation, phosphorylation, acetylation, methylation, and grafting.
• Biological Methods: Enzymatic treatment and microbial fermentation.

This research topic aims to contribute significantly to the enhancement of polysaccharides' biological activities and their application potential. Enhanced bioactivity, biocompatibility, biosafety, and bioavailability achieved through these modifications will provide promising opportunities for the utilization of polysaccharides in diverse fields, including foods and medicine.
