Non-bovine dairy animals such as goats, camels, sheep, donkeys, yaks, mares, and llamas play an essential role in the dairy sector, providing milk with distinct nutritional properties that support local diets and specialized dairy products. These non-traditional milks often contain unique protein profiles or higher fat and protein contents than cow's milk, offering alternatives for dietary needs such as allergies or diabetes. Despite their nutritional value, the scientific exploration and technical innovations in the processing and characterization of milk from these species have not advanced as rapidly as those from bovine sources, primarily due to their limited production range in rural areas. However, growing interest in their unique properties has sparked research efforts aiming at improved processing techniques and novel product development.
This Research Topic aims to showcase recent advancements and research in the production, processing, and characterization of non-bovine milk. It seeks to uncover and enhance the safety, quality, nutritional profile, and shelf life of non-traditional dairy products, paving the way for innovative solutions that address current limitations. With a focus on creative technologies and interdisciplinary collaborations, this Topic strives to bridge the knowledge gap and offer practical insights to advance this promising field.
To gather further insights in the processing and enhancement of non-bovine dairy products, we welcome articles addressing, but not limited to, the following themes:
• Quality and authenticity of non-bovine milk and dairy products • Innovations and emerging processing technologies, both thermal and non-thermal • Development of functional dairy products with added health benefits • New preservation strategies for extending the shelf life of dairy products • Bioactive peptides derived from non-bovine milk and their potential applications
We invite submissions across various article types, including Original Research, Reviews, Mini-reviews, and Perspectives.
