Background

We are delighted to present the Rising Stars in Food Characterization 2022 article collection. This collection showcases the high-quality work of internationally recognized researchers in the early stages of their independent careers.

All Rising Star researchers were individually nominated by the Frontiers in Food Science and Technology editors in recognition of their potential to influence the future directions in their respective fields. The work presented here highlights the diversity of research performed across all dimensions of food characterization and presents advances in theory, experiment, and methodology with applications to compelling problems. Contributions to this collection should demonstrate their alignment with some of the UN Sustainable Development Goals.

New articles will be added to this collection as they are published. Early career researchers are defined as within 10 years after completing their Ph.D., M.D., or other equivalent terminal degrees. The Topic Editors suggest the submission of original article types.
